The Process
After handpicking, cherries are floated in water to separate any defective fruits. Each cherry is then meticulously inspected, ensuring only the best are chosen. The selected cherries are laid out on raised beds or patios, allowing air to flow evenly around them for uniform drying. This delicate drying process takes 3 to 6 weeks, with cherries turned and raked multiple times daily to avoid bruising and maintain consistent flavor development.
Once fully dried, the cherries are hulled to remove the seeds from the fruit, followed by a final dry milling step to prepare the beans for roasting.
